Kandima Maldives unveils The Fresh Labs farm-to-table initiative

Kandima Maldives has unveiled The Fresh Labs, a farm-to-table initiative that will provide guests with the freshest local produce.

Under The Fresh Labs initiative, the culinary team at Kandima will have the opportunity to source the freshest Maldivian produce from the green island farms located at the resort and its surrounding islands.

It will reduce Kandima’s dependence on imported produce and instead support local producers to ensure resort guests always have the greenest and freshest salads on their table.

“At Kandima, we believe in being environmentally responsible and take sustainability very seriously,” an announcement read.

“Why import something from thousands of kilometres away when with a little extra effort it could be produced locally at almost the same cost and by doing so bring numerous benefits to local communities and the environment?”

The local green initiative makes Kandima one of only a few island resorts in Maldives to take a serious yet critical step towards local sustainability and all-round wellness of guests.

Amilla Maldives welcomes new feathered friends

Easter week saw 59 ‘hot chicks’ arriving at Amilla Fushi Maldives Resort and Residences and taking up residence at the island’s newest abode — Cluckingham Palace. They have been joined at their residence by one lucky fellow named ‘Cluck Norris’.

It may be nothing new to see stylish ladies arriving at Amilla but there’s certainly something unique about these ‘islanders’. Measuring about 27 inches tall and decked head to tail in glossy feathers, these girls are a truly egg-citing addition to the island.

We are talking about the 59 hens and one rooster that have arrived at Amilla just in time for Easter, of course.

The resort temporarily closed to guests in April due to the coronavirus pandemic, but a team of Amilla islanders including General Manager Jason Kruse and Sustainability Manager Victoria Kruse have stayed on the island in order to work on a host of new projects, including Cluckingham Palace.

The islanders who were safely quarantined from the outside world celebrated their new arrival with bubbles and beer.

The new chicken residence is fit for royalty. It is tucked away on a secluded part of the island, surrounded by lush tropical foliage which helps to keep the area shaded and cool for the feathered friends.

The chickens are now settling in, and when guests return to the island they will help provide the freshest of eggs to Amilla’s renowned kitchens.

The Cluckingham Palace project is part of Amilla Maldives’ Homemade@Amilla and Homegrown@Amilla concepts, which involve growing and making fresh food right there on the island.

The fresh eggs are also a tasty addition to Amilla’s paleo, keto and low-lectin ‘Wellness Your Way’ dishes. The host of speciality dishes have been added to the main menus in order to cater to the dietary demands of today’s guests. Mirihi Island Resort welcomes back Felix Bamert as Executive Chef

Nearly a year after leaving Mirihi Island Resort to continue his culinary journey back in Thailand and in Maldives, the resort’s former Executive Chef Felix Bamert has returned to his home away from home.

Felix rejoins the Mirihi team as the resort’s Executive Chef ahead of its reopening on September 15.

During his eight years as Executive Chef of Mirihi from 2011 to 2019, Felix revolutionised guest dining experience in Mirihi, combining his wealth of culinary talent, his impeccable personalised service standard and most importantly, his eagerness to personally ensure his guest’s absolute satisfaction.

“Welcome back, Felix,” an announcement by the resort read.

Mirihi is reopening on September 15 with enhanced health and safety protocols and with a renewed commitment to the well-being of guests and the team.

Located in the South Ari Atoll, Mirihi is an intimate resort with only 37 rooms, and a warm, welcoming atmosphere with friendly staff. Guests will immediately feel at ease in the safe and beautiful environment.

Soneva launches Virtual Wine Tasting programme with world-leading winemakers

World-leading luxury resort operator Soneva has launched its Virtual Wine Tasting programme.

Starting October, Soneva has partnered with some of the most prestigious wine makers around the world to host virtual wine tastings.

The tastings will be taking place on Zoom, with onsite guests at Soneva Fushi in the Maldives, where you can meet and greet (albeit virtually) and hear directly from the wine makers themselves.

The programme for the next three months features:

Each tasting will start at 6.30pm Soneva Fushi Time (GMT+6) and last for one and a half hours.

Those interested in attending any of the Virtual Wine Tastings can contact via email, winetasting@soneva.com.

Once you confirm your participation, a Soneva representative will be in touch to assist you with purchasing the wines and have them delivered to your home.

You will have the option to either purchase one bottle of each wine presented for the event, or to buy cases of these wines. The prices for the bottles of wines will differ depending on the event, and includes the participation costs for the event.

Emerald Maldives Resort & Spa is now offering an even broader multi-ethnic and multi sensory experience with Russian dishes served at its restaurants, thanks to visiting Chef Nikita Martynov.

Working as an executive chef for 10 years, Chef Martynov’s career began in Syktyvkar, Russia. He continues his culinary journey in Moscow where he currently resides.

Chef Martynov’s hotel experience began in Sochi during the 2014 Winter Olympics. He then worked at the five-star Grand Hotel Krasnaya Polyana, where he had the opportunity to work as one of the private chefs to Prince Albert of Monaco and former Italian Prime Minister Silvio Berlusconi.

He currently works at Chekhov, a restaurant located within the famous MXAT theatre in Moscow. The restaurant has been recognised as the Best Theatre Restaurant at the Royal Russian Awards.

Chef Martynov recently stayed at Emerald Maldives to train resort staff and improve its Executive Chef Aldo’s knowledge of Russian cuisine. During his week-long stay from October 5-12, he designed a Russian menu for Aqua and Beach Grill restaurants.

During Chef Martynov’s stay, the resort also organised a six-course Russian dinner on the main beach, paired with high quality wines and champagnes. The resort’s head sommelier, together with representatives from Maldivian company Di Vine Wine Cellars carried out the wine and champagne selection for the special dinner.

Russian cuisine is super delicious. It is made up of a combination of fish, pork, poultry, caviar, mushrooms, berries and honey. Crops of rye, wheat, barley and millet are usually used for the preparation of bread, pancakes, pies, cereals, beer and vodka.

Some common Russian specialties include soups that can be both hot and cold, salads with potatoes as one of the main ingredients, porridge and a variety of meats, fish and vegetables.

Meat is usually used in three different ways: either boiled and then used in soups or porridge, baked in pots together with cereals, or jellied using a gelatin base and then left to marinate for it to be served in a large serving bowl called Miska or Goo Bowl.

Desserts are considerably sweet. They are usually seen accompanied with jam or have an alcoholic beverage as an ingredient to spice things up and add flavour to it.

“The resort main scope with this initiative is to offer guests the possibility of enlarging their gustatory stay in a Deluxe All-Inclusive resort to 360° culinary experience and for them to absorb the essence of the Russian culture also if at the Maldives,” an announcement by the resort read.

Soneva Jani collaborates with renowned Swedish Chef Mathias Dahlgren to open new restaurant

With a name inspired by its breath-taking overwater location in Soneva Jani’s lagoon, Overseas by Mathias Dahlgren is the brainchild of the acclaimed Swedish chef and restaurateur.

After visiting Soneva Jani, Mathias fell in love with the location and wanted to celebrate the seafood found in the Indian Ocean and the produce grown in the resort’s organic gardens.

Located by The Gathering, the overwater al fresco restaurant and kitchen has a laid-back atmosphere with uninterrupted views towards the horizon is open for lunch and dinner.

The menu focuses on pescatarian, vegetarian and plant-based dishes, serving a selection of single plates, sharing plates and signature mains for lunch and dinner. The fish and seafood featured on the menu are sustainably caught in local waters, while the organic vegetables, herbs and fruit are freshly picked from Soneva Jani’s own organic gardens.

The menu is split mostly between seafood and vegetarian dishes, while there will be fully plant-based options.

A pre-set menu of Chef’s Choices is the highlight, letting diners try a full range of dishes which includes single plates, sharing plates, signature dishes, an open selection for the main dish and dessert. With the pre-set menu there is a possibility that items from the single dish menu can be added to the meal.

In the Chef’s Choice Dinner set menu expect snack plates like Soy Roasted Macadamia Nuts (plant-based), and Chickpea Crisp and Oyster Leaf Emulation (plant-based). Sharing plates such as Asian Mango and Buffalo Mozzarella with Thai Basil, Olive Oil and Black Pepper (vegetarian), or Sashimi of Raw Smoked Tuna, Soy Mayonnaise, Ginger, Black Radish.

Signature dishes include Charcoal Grilled Fish and Salad Wrap served like Korean Bo Ssam or Black Fermented Bean Stew, Kimchi Pickled Greens, Black Pepper Sauce (vegetarian).

The main course choices include Fried Shrimp with Spicy Glass Noodle Salad and Peanuts and the Hot and Sour Tofu with Grilled Bok Choy (plant-based).

Desserts like the plant-based Avocado, Passion Fruit, Physalis, Kaffir Lime, Vanilla and Mint, or the vegetarian Cherry Sorbet, Tonka Bean, Coconut Ice Cream and Dulce De Leche round off the meal.

There is also a Chef’s Choice lunch menu which consists of single plates, signature dishes, and dessert.

Mathias has been interested in food for as long as he can remember, having learned the connection between food, family, and the land at an early age. He trained as a chef in his hometown of Umeå and has an extensive history of running successful restaurants in Stockholm, including the legendary Bon Lloc, which he ran between 1996 and 2005 and was awarded one Michelin star.

Renowned for his culinary skills and creativity, Mathias’s food philosophy is based on what he calls “the natural cuisine”. In his own words, this builds on “a Swedish identity on a regional platform, creating cuisine that is open for local as well as global ingredients and influences. A cuisine that celebrates the fresh produce of each season.”

Through the years, Mathias has received accolades from both the food industry and international press.

Today, he is still the only Swedish chef to have been awarded the internationally acclaimed “Bocuse d’Or” (at the age of 27), which is the most prestigious gastronomic competition in the world. He is also the sole chef in Sweden to have been named “Chef of Chefs” eight times by Sweden’s top gastronomic colleagues.

Mathias was president of the Swedish Bocuse D’Or Academy for many years and a former professor at University of Umeå.

He is also the author of seven cookbooks.

In 2007, he opened the eponymous Mathias Dahlgren restaurant at the Grand Hôtel, consisting of two restaurant concepts, Matbaren (“the food bar”) for more casual lunches and dinners in a contemporary setting, and Matsalen (“the dining room”) for more elegant evening dining.

In 2008, Matsalen received its first Michelin star, becoming a two-star Michelin restaurant in 2009, at which time Matbaren received one Michelin star.

In 2014, Mathias added a third, innovative concept of Matbordet, Swedish for “the dining table” within Matsalen, where guests ate right in the middle of cooking process.

At the end of 2016, Mathias chose to close Matsalen and Matbordet at the top of their game. The premises underwent an extensive renovation and on February 13, 2017, Mathias opened the new lacto-ovo vegetarian restaurant named Rutabaga, taking green cuisine to a fresh, new and delicious level.

The rutabaga is one of the few vegetables to originate in Sweden, which is why they are called ‘swedes’ in the UK. In North America, France and Italy they call them rutabagas, which comes from the original Swedish term for the vegetable: rotabagge.

He currently runs two restaurants at the Grand Hôtel in Stockholm, the award-winning Matbaren and the vegetarian eatery Rutabaga. He also runs the Green Rabbit rye bread bakery, with focus on rare Swedish grains, in the Norrmalm district of the city.

His establishments are lauded for serving food made using the finest fresh ingredients, along with a focus on outstanding service with a lot of charm.

Soneva Jani is located on the island of Medhufaru within a 5.6-kilometre lagoon in the Noonu atoll, and has uninterrupted ocean views in all directions.

The lagoon is 35 minutes by seaplane from Velana International Airport, and one hour by speedboat from Soneva Fushi. The recently opened Maafaru International Airport in the Noonu atoll is just a 15-minute complimentary speedboat ride from Soneva Jani.

Meaning ‘wisdom’ in Sanskrit, Soneva Jani currently comprises 24 overwater villas and three island villas, with additional Water Retreats to be built in Chapter Two.

Five islands encircle the lagoon, each one with soft white sands and covered in rich tropical vegetation. Four of the five islands will remain untouched, making Soneva Jani the lowest density development in the Maldives.

The overwater villas are spaced across the expansive lagoon, offering privacy and extensive views over the Maldives’ turquoise waters. The island villas will be tucked into the lush greenery, providing the ultimate privacy, and all within steps of the beach.

Seaside Finolhu appoints new Executive Chef, Food and Beverage Director

The newly redesigned five-star Seaside Finolhu resort will reopen on November 1, as the first member of the Design Hotels in the Maldives.

Bolstering the already impressive ranks of talent at the hotel will be two newly appointed members of staff: Memo V. Hernandez, Executive Chef, and Benjamin Gouet, Director of Food & Beverage.

Together, they will reinforce Finolhu’s outstanding levels of gastronomy and service. Rounding out the offering of culinary craftsmanship and international flair – from traditional Maldivian fare, to modern Japanese cuisine, or flavours of the Middle East and North Africa – will be a focus on handmade produce, crafted from fresh ingredients.

Memo V. Hernandez, Executive Chef

Bringing more than 16-years’ experience in managing restaurants and hotel kitchens internationally, Hernandez joins Finolhu following his previous role as Executive Chef at The Nautilus Maldives.

The Costa Rican native brings a wealth of luxury experience, including training at the three Michelin-starred Quique da Costa Restaurant, Valencia.

Hernandez has as a passion for the traditional, including farming, local produce, and the rustic production of cheeses. This is coupled with a modern outlook towards keto, superfoods, wellness, and vegetarianism and veganism – this includes ambitions to create a variety of dishes where the vegetable is the star.

With ecological and environmental awareness at the forefront, he is looking forward to putting his touch on the menus, including a focus on seasonality, wholesome breakfasts, and plans to grow thyme, rosemary, basil, mint, and coriander on the island.

Benjamin Gouet, Director of Food and Beverage

French-born Gouet has more than 15-years’ experience in the food and beverage industry, and previously held the position of Director of Food and Beverage at Bandos Maldives Resort.

His earlier work experience in senior roles has taken him to key luxury hotels across the world, including the Sheraton Club des Pins Resort, Algeria and Le Barthélemy Hotel & Spa, French West Indies.

Gouet will manage the resort’s overall food and beverage service operations, ensuring the highest of standards are met across Finolhu’s six food and beverage outlets – each with its own distinct personality and aesthetic to accentuate.

As a wine lover and cocktail connoisseur, he will enhance the culinary journey with beverage pairings for each cuisine, ranging from wines and whiskeys to specialty teas.

Finolhu was opened in June 2016 and consists of four islands with long beaches. It has 125 beachfront and overwater villas — more than half with private pool — and four restaurants.

Located on the opposite side of Finolhu’s marvellous sandbank, Crab Shack can be reached by an immersive seven-minute traditional dhoni ride or a 20-minute walk along the beach.

The restaurant transports diners to another world where guests can indulge in mouthwatering seafood in the rustic ambience of the open-fronted wooden shack while gazing out across the azure waters of the lagoon.

While Finolhu recently completed an extensive transformation process that accentuates its image as a design-led luxury destination, the resort has also introduced new names and concepts for its dining outlets.

Finolhu’s all-day dining restaurant now goes by the name of Beach Kitchen. Serving international fare during the day, Beach Kitchen also brings the resort’s culinary journey concept to life with destination-themed dining experiences each evening.

The Arabian Grill serves up an exotic mélange of flavours from across the Middle East and North Africa with a highlight on freshly grilled fishes.

The resort’s fine-dining restaurant has retained the name Kanusan but improved into a much more sophisticated ambience with a must-try live sushi corner.

The Beach Club features the new library offering a relaxing spot to lounge on, while the Beach Bar serves well-crafted drinks.

For guests looking to grab a drink, the new Milk LAB serves a selection of refreshing milkshakes, protein drinks and fresh coffee.

Finolhu was opened in June 2016 and consists of four islands with long beaches. It has 125 beachfront and overwater villas (more than half with private pool) and four restaurants.

Emerald Maldives Resort & Spa has unveiled new plant-based dishes and mocktail menus at all the six of its exceptional restaurants and bars, available as part of the Deluxe All-Inclusive offering.

Veganism has hit an all-time high in 2020, and the five-star member of the Leading Hotels of The World has recognised this and adapted to create mouth-watering options within all of its dining establishments.

The award-winning Amazònico now offers both vegan and vegetarian options including the Jardin Quemado Salad and Chilean Salad.

At the Aqua Restaurant, there are several new options, including the vegan pumpkin soup which is made using fresh pumpkins from Emerald Maldives’ very own vegetable patch.

Le Asiatique now prepares a special vegan fried rice and maki sushi, and at the Beach Grill, guests can enjoy a cooling Tomato Gazpacho. For something sweet there are vegan blueberry and orange cakes and Emerald Maldives’ healthy twist on a Green Tea Crème Brûlée.

For the ultimate taste of plant-based luxury, Emerald Maldives is delighted to prepare guests a Vegan Floating Breakfast, delivered to their villa which can be enjoyed in the privacy of their own private pool overlooking the turquoise lagoon. Guests can expect an almond chia seed pudding, fresh bread, fruit salads, a special avocado salsa, herbal teas and exotic fresh juices.

“Since opening the resort in 2019, we have seen more of a demand from our guests for really healthy, plant-based food, so we have enjoyed adapting the menu to fit this trend,” General Manager Srikanth Devarapalli said.

“Travellers generally seem more health conscious than they used to be and going on holiday now doesn’t necessarily mean changing your diet – it is a lifestyle movement and we are moving with it too. We are continuously updating and evolving our menus and look forward to surprising our guests!”

In addition to the new plant-based menus, Emerald Maldives is set to introduce the ‘Green Corner’ at Aqua restaurant from January.

Guests will be spoilt for choice with the variety of ingredients they can choose from to prepare their own smoothies and juices. These healthy, refreshing drinks are also available at both the Sunrise and Sunset Pool Bars and new for 2021 – in the villa’s very own minibars.

With both sustainability and freshness in mind, the resort grows as many fruit and vegetables on site as possible including bananas, watermelon, papaya, pumpkin, Maldivian chilli, Kopy leaves, curry leaves, pandan leaves and cucumber.

Recognising that there is more of an appetite for alcohol-free beverages than ever before, Emerald Maldives is also launching a new mocktail menu for 2021. Guests can look forward to a refreshing Mango Mule or a Passionfruit Daiquiri – but without the hangover.
