Exclusive to 14 guests, the culinary journey begins with a dinner six metres under sea.

Lunch at FIRE – Aug 3

The second showcase of Chef Paco’s culinary finesse takes place at the dramatic over water setting of FIRE.

Enveloped by all shades of endless blue vistas, 14 diners can expect theatrical flair served alongside a gourmet six-course lunch featuring dishes such as Tartar of Tuna, Caviar and Anchovy, Lobster Gazpacho with Basil Perfume and Slow-cooked Confit Lamb Shoulder with Lemon Puree.

Showcasing the succulent seafood found in and around the Maldives, Edge specialises in creating contemporary culinary masterpieces.

Guests joining Chef Paco’s one-off dinner at Edge will delight in dishes including Salmon Tartar, The Garden of Paco Roncero, and to wrap up, Rhubarb Soup with tomato and kumquat confit.

Lunch at Subsix – Aug 10

Six metres below Edge, the underwater playground of Subsix hosts guests for Champagne breakfasts, subaquatic lunches and weekly glow parties, with aquatic-themed décor and surrounding views of the reef and marine life.

Chef Paco’s special lunch journey includes Spanish Tortilla of the 21st century and Lobster with extra virgin olive oil and pink grapefruit soup. For those with a sweet tooth, the menu finale is Orange Sorbet with Pedro Ximenez and virgin olive oil.

Chef Paco’s cuisine shines through in these menus, all of which start with one of Paco’s famed dishes, ‘Taster of Olive Oil from Ancient Olive Trees’.

Niyama Private Islands offers a collection of 134 villas, suites and pavilions, located over a turquoise lagoon and dotted along the beaches of two islands – Play and Chill, which are connected by a bridge.

As part of its culinary offerings, the vibrant Kuredu Island Resort & Spa, located in the pristine Lhaviyani Atoll, has introduced a new seafood and plant-based menu at its sea-facing restaurant, Beach Shack.

Executive Sous Chef Marek Koucky, inspired by his culinary training in Mexico and travels around the world, and his talented team, have crafted a delightful menu that stays true to ‘produce-to-plate’ ethos.

It features specially selected produce of the region, locally sourced seafood, and a daily harvest from Kuredu’s expansive greenhouse and organic garden, bursting with fresh vegetables, fragrant herbs, and aromatic spices.

The new à la carte menu offers a flavourful selection of seafood delights, with signature dishes including Jumbo Crab with spiced bisque, chicken wing, charred pineapple, and tapioca cracker and Lobster Medallions with young coconut, red curry, and pearl barley risotto.

Health-conscious and ethically-minded guests can enjoy tucking into a luscious array of inventive vegetarian, vegan, and gluten-free selections. Chef’s recommendations include Pumpkin Veloute served with mushrooms, smoked almonds, and truffle oil and Grilled Artichokes with marinated artichoke hearts, asparagus, and mustard seeds.

All the plates are visually appetising, delicious, and elevated with a locally inspired twist.

Complementing the refined dining experience are freshly-baked bread with special ‘seaweed’ butter, served before dinner service begins and a hand-picked selection of premium wines from Kuredu’s very own wine cellar.

Soneva Jani unveils new seasonal menu at Overseas by Mathias Dahlgren

Soneva Jani, the iconic over-water resort in the Maldives’ Noonu Atoll, has introduced a new seasonal menu at Overseas by Mathias Dahlgren.

The dining destination, which takes its name from its spectacular location in the Soneva Jani lagoon, celebrates the best of local ingredients – from seafood caught sustainably in nearby waters, to fruit and vegetables grown in the resort’s own organic gardens.

With its laid-back ambiance and remarkable ocean views, the restaurant offers a fun, casual dining experience for guests with an emphasis on high-quality cuisine and service.

One of Sweden’s most decorated chefs, Mathias Dahlgren’s menu focuses on modern pescatarian, vegetarian and plant-based dishes, with single plates, sharing platters and a Chef’s Choice menu served for lunch and dinner. More than half of the new menu was developed especially for Overseas, inspired by the abundance of exquisite locally sourced produce.

Highlights from the à la carte menu showcase Chef Dahlgren’s food philosophy, which he calls ‘natural cuisine’, where ‘fun dining is the new fine dining’.

With an incredible depth of flavour, a sharing plate of deep-fried corn is served with tarragon mayonnaise, smoked bell pepper powder and garlic oil.

The avocado toast, set to become a signature classic, is served with leaves, herbs, sprouts and flowers from the Soneva Jani gardens, flavoured with lime, jalapeno and sea salt.

A meltingly tender yellowfin tuna carpaccio is brushed with a piquant wasabi emulsion and served with cress, lemon skin and white onion.

Sides include deep-fried Brussels sprouts dressed with aromatic coriander and chilli, and mashed green peas, with chilli, brown butter, mint and black pepper.

The delectable choice of desserts includes a tempting cherry sorbet, teamed with fizz and freshly picked oxalis, and ice cream made from local coconuts, served in its shell with toasted coconut flakes.

With three savoury dishes, accompanied by one side and followed by dessert, the Chef’s Choice is a delicious way to experience Mathias Dahlgren’s culinary vision which lets the ingredients shine.

This tasting menu changes on a daily basis to reflect the very best produce sourced that day.

Running two acclaimed restaurants in his native Stockholm – the award-winning Matbaren and the vegetarian eatery Rutabaga – as well as the Green Rabbit rye bread bakery, and author of numerous best-selling cookbooks, Chef Dahlgren is considered one of Sweden’s finest chefs.

He is still Sweden’s only chef to have won the prestigious Bocuse d’Or, and has been named ‘Chef of Chefs’ eight times to date by the country’s top critics.

“I’m really inspired for a new season of cooking at Soneva Jani here in the beautiful Maldives,” says Mathias Dahlgren.

“Our concept of local greens and regional seafood remains the same, but this year we have incorporated more à la carte dishes and more flexibility into the menu for diners.”

Overseas by Mathias Dahlgren launched in 2020 as part of the new Soneva Jani Chapter Two. This exciting new era for the resort includes luxurious new Water Reserves and island villas, three innovative dining concepts and ‘Soneva Unlimited’, an indulgent new way to experience all that Soneva Jani has to offer.

Inspired by the Sanskrit word for ‘wisdom’, Soneva Jani is located on the island of Medhufaru in the Maldives’ Noonu Atoll.

The Ritz-Carlton Maldives, Fari Islands has welcomed the opening of Arabesque.

An eye-catching tribute to a traditional Bedouin tent, the location invites diners on a journey from Lebanon to north India at Fari Marina Village.

The addition of this restaurant is just one of seven distinct culinary venues available at the Ritz-Carlton Maldives, Fari Islands which strikes the perfect balance between high-end dining, beachfront luxury, and wellness-centred menus.

A pleasant eight-minute journey in a dhoni, a traditional wooden boat, from the resort island to Fari Marina Village, brings guests to a sunken dining room, with hanging lanterns and colourful fabrics, sets the scene for shareable mezze platters, tandoor-grilled meats and iconic street fare.

Dishes are offered alongside flavourful hookahs, Turkish coffee, Moroccan tea and creative cocktails.

Starting now, resort guests will have the opportunity to experience an imaginative menu, where the best of international favourites are infused with local Maldivian flavours and island-grown ingredients.

Conceptualised by Executive Chef Christian Wiedenmann, the menu highlights a global cuisine with a Maldivian touch. All-natural, fragrant herbs and aromatic spices are sourced much from the island’s bounty, with seafood freshly caught within the atoll and delivered by island fishermen and produce from trusted local suppliers.

“Each dish is elevated with a local Maldivian twist, and a dash of island’s spice served in an inspiring setting over the turquoise lagoon. Dining at Aqua is truly an immersive culinary journey through the region’s unique flavours,” said Chef Christian.

Kicking off the menu are dishes like ‘ihi homos’, which comes with curry leaf tempura lemongrass and scented seafood broth; ‘sustainable pole caught yellowfin tuna’ with beach herbs and pickled white radish; ‘Hinnavaru fisherman’s catch of the day’, served with Thai salad and steamed jasmine rice, and ‘kukulhu riha 1.0′, sous vide corn-fed chicken breast, enriched with Maldivian coconut curry sauce and served with steamed broccoli.

To complement the dining experience, guests can indulge in freshly-baked bread with special ‘curry leaf butter’, served at the beginning of a meal and choose their favourite bottle from the restaurant’s specially selected collection of premium wines.

Diners can finish their meal on a sweet note with ‘coconut bavaroise dome’, a luscious medley of mango fruit leather, mango coulis, mango sorbet coconut crumble, and meringue and a tempting ‘mishti doi’, combining Bengali-style baked yoghurt and caramelised Lhaviyani Atoll banana.

Top plant-based chef to visit Amilla Maldives

Amilla Maldives Resort and Residence is set to host vegan culinary wizard, Kirk Haworth, from November 11th to 25th.

He will be joined by his sister, Keeley Haworth, who co-founded with him the prestigious plant-based restaurant, Plates London.

The siblings will offer Amilla’s guests the opportunity to dine on delicious vegan dinners at special gala events. They will also hold cooking master classes during their two-week residency at the five-star resort.

In the evening, guests can enjoy a sushi tocused dinner aimed to ease digestion with dishes rich in vitamins, omega 3 and nutrients on their private villa deck.

‘Revitalise and Reset’

Aimed specifically towards Covidl9 related health problems such as burnout, anxiety and respiratory issues, guests can now opt for the brand-new ‘Revitalise and Reset’ mood, which extends across two to four days. Guests can create their own schedule for the chosen days with a range of relaxing and respiratory focused treatments to fit their needs.

Brain fog and feelings of anxiety are targeted during a 30-minute breathing workshop led by Milaidhoo’s resident Yogi.

Taking place at sunrise, the magical setting aids an incredibly focused practice. Guests will understand and learn to control their breathing to release any builtup physical and psychological tension and prepare them for the day ahead.

The development of self-awareness and self-control through breathing can also help guests overcome stressful and challenging situations in their daily lives.

A private sunrise yoga session and meditation on the secluded sandbank can be arranged, followed by a healthy breakfast to continue the peaceful mindset, and daily detox juices or teas are on offer throughout the programme, cleansing the body physically.

Perfect for relaxing in-between activities, guests can ease into a comforting bath during the programme, featuring soothing Elemis spa products and rehydrate on fresh fruit juice and roasted coconut slices, grown on the island.

A 30-minute gentle dry-skin brushing treatment is also included, which increases lymphatic circulation and prepares the skin before completely switching off for a 1 hour 30-minute, full-body intuitive massage.

Eating well is now even more flexible and fun with Amilla Maldives’ new All-Inclusive Menus

Amilla Maldives Resort and Residences has launched a flexible way of dining in the Maldives. The new format allows guests unprecedented access to all seven à la carte restaurants on the private resort island.

Normally resorts in the Maldives only offer access to one designated restaurant for guests on meal plans such as Half Board and Full Board and exclude their signature restaurant from the deal.

But not so with Amilla, where guests can dine in any available restaurant. Guests can even enjoy Amilla’s beautiful signature contemporary Japanese restaurant, Feeling Koi, which is suspended over the glittering lagoon.

The modern and playful Baa Atoll resort is known for its trailblazing ideas. Amilla recently won the coveted Destination Deluxe Wellness Cuisine of the Year 2021 Award for its groundbreaking Wellness Your Way (WYW) programme.

More than Michelin-starred dining: Four Seasons Resort Maldives at Landaa Giraavaru, Gaetano Trovato collaborate to train Maldivian chefs

In a story of people and their intention – merging inspiration and empowerment – two Michelin-starred Italian chef and culinary artist Gaetano Trovato will be working exclusively with Four Seasons Resort Maldives at Landaa Giraavaru to mentor and inspire the next generation of global chefs.

Hailing from the medieval Tuscan village of Colle di Val d’Elsa – where he is soon to open his hotly anticipated new restaurant, Arnolfo The Frame – Trovato is an ambassador of the Slow Food movement (rooted in a commitment to community and the environment) who’s on a mission to develop young talent.

From November 2021, Trovato will be spearheading a unique menu at Landaa’s Blu restaurant, marrying specially curated ingredients from Tuscany with Maldivian and island-grown products. Driven by Trovato’s architect-like view of local produce as the raw materials that form the “scaffolding” of each dish, his focus is on expanding the horizons of Blu’s chefs while imparting his passion for producing and cooking with the highest quality ingredients.

Guests can sample Chef Trovato’s culinary magic in person twice a year at Blu. His iconic touch will then continue year-round via his on-site protégées, who will travel to Tuscany regularly to consolidate their learning at Arnolfo The Frame and further develop their own craft and passion.

The‘experience of The Frame will be further replicated at Blu via customised china wares and linens, plus a special vertical selection of Ornellaia, the legendary cabernet sauvignon-dominated Super Tuscan wine.

“We are delighted to have Chef Trovato nurture our culinary and service talent in this way,” comments General Manager and Regional Vice President Armando Kraenzlin.

“As well as absorbing the knowledge of one of Italy’s most revered icons of culinary quality, it’s a chance for them to experience Italy and Tuscany first hand and become part of an international community of culinary and service professionals.”

Born and raised on a Sicilian farm, Trovato considers himself fortunate to have been taught to appreciate quality ingredients from a young age. “This collaboration is partly about paying that good fortune forward and fulfilling a long-held dream of inspiring the next generation of chefs,” he says.

Having earned his first Michelin star at 25, he takes great pride in encouraging young professionals “to find their unique path and way of expressing themselves through food.” His personal process includes drawing his creations prior to making them “as if they were real projections of architecture.” Sourcing exclusively from markets and small suppliers, he admits to being “moved emotionally by the raw materials” that underpin the “evolution of flavour.”

It’s a process of evolution that has echoes in the Planetary Wellness concept of Landaa Giraavaru, which ripples out from the Resort’s jungle heart, through its earth-focused wellness concept, AyurMa, and into its wide-reaching sustainability initiatives. Through investing in young Maldivian chefs and deepening their connection to local produce, the collaboration with Trovato is another strand in the Resort’s interwoven tapestry of care, conservation and community.

St. Regis Maldives launches exciting new guest chef series

Luxury resorts in the Maldives come a dime a dozen, where dazzling turquoise lagoons, plush overwater villas, and first-rate hospitality are baseline expectations. Where these five-star escapes differ, though, is the food. Since its 2016 opening, The St. Regis Maldives Vommuli Resort set itself apart as a culinary tour de force with its selection of six gourmet, globally inspired restaurants and splashy wine cellar degustation menus. Now with a new guest chef series, foodie travelers have another delicious reason to book their next Maldivian getaway.

The resort’s rotating guest chef series rolled out in late 2021 and will continue through 2022, attracting a global roster of exceptional chefs to the five-star getaway two days per month. Early December, for instance, saw acclaimed chef Prateek Sadhu transfer his brilliant cooking techniques from his lauded Mumbai restaurant Masque to the Maldivian coastline with special dinners and intimate cooking classes. Previous headliners include chef Dharshan Munidasa, the maestro behind Sri Lanka’s world-famous Ministry of Crab, and Valencian-based chef Eduaro Torres of Molino Roca, with the 2022 line-up soon to be announced. Even if you miss out on the special guest chef dates, the resort’s bevy of restaurants and special dining experiences will still sate your gourmet appetite.

The St. Regis Maldives’ centrepiece restaurant is Alba, where a decadent buffet breakfast is served (if you’re not having breakfast in your own swish pool villa) as well as international choices for lunch and Italian for dinner. On an agreeable morning, guests enter the elegant, airy space to choose from a lavish buffet spread — from fresh dim sum and South Asian delicacies to continental bits — before settling onto beachfront tables on the sand. The breakfast à la carte menu is excellent, too, featuring sweet and savoury favourite waffle and duck leg confit and Maldivian-inspired omelets.

Tucked underneath Alba is the resort’s gastro magnum opus: Decanter, a subterranean wine cellar hosting multi-course degustations with wine pairings to a lucky few. It’s the experience to book well in advance for the chance to have executive chef Pedro Samper and Maldivian wine sommelier Ahmed Athif personally guide you through a memorable evening of food (think caviar-topped reef lobster poached in butter) and wine (a selection of vintages sourced from the resort’s 2,000-plus bottle collection).

On the opposite end of the spectrum is Crust & Craft, the designated “beach shack” pizzeria, the resort’s most casual and cost-friendly restaurant. Milaidhoo’s renowned Maldivian gourmet restaurant, Ba’theli by the Reef, now offers a new culinary voyage for its guests, featuring flavours and ingredients from the ancient Spice Route. Served in a combination of local ‘Sufuraa Mathi’ (family-style) and fine dining plating, the dinner includes delicacies from India, Sri Lanka and the Maldives, enabling guests to explore flavours in the unusual setting of an ancient sailing vessel, a Ba’theli.

Guests of Milaidhoo can experience the only restaurant in the world featuring gourmet dishes of inspired island cuisine from the Maldivian Spice Route, set on a boat in the Milaidhoo lagoon. The crew of chefs are constantly enhancing traditional recipes to create local cuisine for the taste buds of Milaidhoo’s discerning guests. Embracing the culture and history of the Maldives, the Ba’theli by the Reef menu includes distinctive modern interpretations of traditional food, spiced down for the more sensitive palate.

“The idea behind the menu is to have people come together and experience the flavours of the Indian Ocean and the Spice Route in a family-style setting while also enjoying a fine dining experience,” says Executive Sous Chef Nathif. “Guests get to taste various flavours and can exchange their thoughts on a dish with each other during the meal.”

The menu includes Maldivian tuna and octopus, curries, fish and chicken dishes from Sri Lanka and India, prepared in true Maldivian island kitchen style. From starter to dessert, the six-course menu evolves around ingredients found in the Maldives islands and are considered delicacies or comfort food.

Specialty Chef de Partie Ziyan, who has been a member of the Ba’theli kitchen crew for several years, encourages guests to taste as many different dishes as possible during one dinner.

“Sometimes guests are hesitant about what to order from the à la carte menu as they don’t know the dishes and ingredients,” he says. “This menu uniquely takes guests on a voyage of flavours as they have the chance to taste a lot of different dishes.”

The new “Journey through the Indian Ocean” menu is available from February at Ba’theli by the Reef every Monday or upon request. The menu consists of six courses and prices for a couple start from USD 350.
